Recipe: Homemade Salsa - Cinco de Mayo

Happy Cinco de Mayo everyone!  Don't you wish you were hanging out by the pool sipping on Margaritas and gorging on chips and salsa?  I do, but its a Monday and that means work!  So we celebrated Cinco de Mayo last night by having some tasty salsa chicken bowls for dinner.  And the best part of the meal... the salsa!  This was my first time making homemade salsa.  Turns out this is an easy task, as long as you're a good chopper.  If you're not, like me, this is still an easy recipe that will wow, but it will just require a little more time :)

What you need:
8 tomatoes
2 jalapeños
medium white onion
medium red onion
1 cup of cilantro, chopped
5 cloves of garlic
3 limes
1 tbsp cumin
1 tsp chili powder
1 tsp salt

First you need to get to chopping!  Chop up the tomatoes and the onions, the smaller the better.  Add them to a big bowl   Now you need to remove the seeds from the jalapeños before you chop those up as well.  Chop up the cilantro as tiny as you can without going crazy.

Continue with this chopping craze and chop up the garlic cloves before adding them to the bowl.  All thats left now is adding the cumin, chili powder and salt before squeezing your limes and adding their delicious juice to the bowl.  Mix it up and you've got homemade salsa!

This salsa remind me a lot of Chipotle's pico de gallo and yields about three cups.  It will be great on chips or to use in cooking!  Now grab a Margarita and enjoy after all your hard work!  And don't forget to the enter the Spring for Coffee giveaway!  Only four days left!

So so good!! I'm really bad at finely chopping things, but I might just have to reward myself with a better knife set lol!! Everything looks so fresh!!

This is absolutely drool-worthy! I've been a chicken about making my own salsa, but this looks so irresistible I think I'll have to give it a whirl!
